Steve Vai and Joe Satriani have the best rock instrumentals.. Just at the top of my head try these songs:
Joe Satriani: Surfing With the Alien, The Extremist, Satch Boogie.
Steve Vai: Bad Horsie, Erotic Nightmares, Juice, Building the Church
Those have to be my favourites.. although there are alot of others. Have fun!

personally i rather like dream theater's dance of eternity. also another good one is emerson, lake & palmer's eruption which sounds a bit similar.
