Anything by Woody Guthrie. It's mostly major chords.

And some Elliott Smith songs are pretty easy. 2:45 AM was one of the first songs I learned to play.

Those are well known...

I recommend looking up your favorite songs. If theyre popular, chances are someone has made an open chord tab that is pretty close.

There's some great Metallica open chords tabs like Fade To Black, Unforgiven, Mama Said.

Try more Dylan, there is an inner Bob Dylan fan in all of us I tell ya!

Or, try open-chord versions of Beatles songs...they're USUALLY (not always) easy.

prince of parties by flight of the conchords, I put a capo on two and dumbed down the strumming to make it less "busy" while I'm singing, but it sounds pretty good

Wish You Were Here by Pink Floyd

It is a fairly simple song when you play only open chords. Then, later, if you wanna learn more than that you can learn the little transitions for the intro, and then after that if you want it more complicated then you can learn the little solos. That is one of the reasons I love this song so much. You can play it SO simple with only chords and it sounds amazing. You can play it with a little bit of flair and it sounds amazing...or you could make a full arrangement and it sounds amazing. it is a song that grows with your guitar skill.

Brothers on a hotel bed by Death Cab For Cutie, you need a capo, if you have one then it is very simple, I am teaching it to a guy I know who is just starting out and instead of teaching him every chord then playing songs, I am having him learn this song since the progression is so easy.

Others:
I Am The Highway- Audioslave
The Curse- Audioslave
So Far Away- Staind
and the list goes on and on....

I agree the only kind of hard thing in that is the plucking at the start. That was one of the first songs i ever learned and i still play it at parties today and people absolutely love it + they thing it is hard to play by looking at it, but in fact it is really simple. lol

I'd try Inside job out. Its' by Pearl Jam. You wont get the whole feel out of just an acoustic rhythm but you set the mood if you sing along with it.

Breaking the girl too, just skip through the solos.
