What would I need to get a Chuck Schuldiner type of sound?
Not his exact tone.
But pretty close.
I have 500 - 600 in U.S. Currency.

And what would be some good setting on a V-Amp 2 to get his sound?

Best bet is getting what he used, a Marshall.

I have a (solid state) Marshall VS100R and I'm fairly sure thats the same as his live head.

Good sounding unit, not too grainy when the gains pushed, but not alot of people will agree with me.

I'd honestly say any valve Marshall pushed properly would give you his sound, pretty mid heavy and not too Gainy, just right.

PS: Good choice, Chuch Schuldiner + Death FTW.

I know he used a Dimarzio X2N.

Chuck used a Marshall VS 8100 head.
They can be found used for anywhere between $150-$300.

The VS100R sounds a lot worse than the 8100, which he used.
