I have a theory.

Maybe when she was young she had a really bad experience on a plane. Like really bad turbulence which resulted in her wetting herself.

Now whenever she experiences changes in pressure, like going up in an elevator she has a great desire to urinate, linked to a subconscious association with that experience.
