Les Paul and Tele shapes are alright but I prefer the Strat shape mainly due to the extra cutaway which I think looks and plays better.

ML shapes look alright...

You shouldn't really have to surgically remove frequencies like that unless you are mixing.

I have to be honest, removing everything above 8kHz seems unnecessary, especially in a live setting.

What is the guitar/amp/pickups etc, because this isn't something you should normally have to do.

I have used various Ernie Balls, Ernie Ball Cobalts, D'Addarios and Elixirs and the Elixirs are by far the best.
