For video recording, I usually record video and audio at the same time. I usually record from my phone or tablet, and then sync it up later with the audio on PC. Make sure to have a cue of some sort...

I used to use a 68 on my RG7321, and found it a bit much for B. I think it would be monstrous on a baritone. Now using a 64 and it's just about right.

Could you list some bands with a similar sound to what you would like? I'd second the suggestion of the Fender, with the SA coming in second. Both are very versatile guitars.

I used to use 11-68 on my 7 string and had no problems unless I tuned up. Even then, it was still playable a step up. You should be fine.
