I did a whole SG copy pretty much exclusively with GFS parts. Fixed wraparound bridge, tuning pegs, electronics, etc. Even body and neck. Only the pickups and strap buttons were purchased elsewhere....

This is so true. I used a $50 Fender pedal tuner for years in a band. It was great.
Right now, my pedalboard has a $20 pedal tuner on it. Works just fine.

You should be fine just swapping the pickups. Unless you want to change the pots out for new. I don't know how old they are, but pots are cheap and you're in there anyway.
