On every guitar finish, you have to wet sand to at least 1500 grit. That will get your orange peel out. Then you buff it.
You only need as many coats that will prevent you from sanding through.

Polys will yellow dramatically as well. The waterbased has a blue tint, so that wont be a problem. But oil based will always yellow.

You would just use a new diagram of the pickups you are using, since you have to rewire the whole thing anyway.

Just finishing up the last coats of oil on the blue strat today. Havnt decided on pickups yet.
The walnut strat will be getting clear coat on just the top. The back and sides are oiled.
