Maybe also try regular 10's instead of the STHB set. The Heavy Bottom gives you larger bass strings which seems to be the sound you're trying to get away from.

Seymour Duncan's website has awesome wiring diagrams. Just cross reference the Gibson instructions for what each wire does in case the colors don't exactly match SD's site and you should be good.

If the buzz goes away when you touch metal it's a grounding issue. Try resoldering the connections again and make sure you didn't pull/break the other end of the wires that connect to the jack.
