Depends entirely on personal taste. I use a 0.73mm one for everything but many will argue that that's too thin. Fvck 'em, I like them.
I suggest that you buy a heap of different ones and try them out.

I use a GT-100 with my RM100. The RM100 is MIDI switchable so that's how I switch the three channels. You could do the same thing with a Pod. As well, you can 4CM it too.

Not sure about the biasing on those but I can't see any way to adjust it on the schematic. I'd guess it's simply plug and play like most other Peaveys.
