On an amp it means it outputs from the preamp and bypasses the power amp. It's a very broad term though, but a DI just changes high impedance to low or vice versa.

Cabs are generally very durable, if anything were to break down it would probably be the connection/speakers. Combos are a little different, as you have the head electronics attached to the cabinet.

For dense metal stuff I usually stick with dynamics. I like anything usually on or just a little off-axis. For mic choice I'd go with the 906, 57, SM7, or 421. Great starting points.
