You should probably finish the fretboard with some kind of clear coat, or maybe shellac. Oil finishing or leaving it unfinished will make it end up super dirty over time. I've seen people clear coat... |

I did this with a bolt-on squier, and I removed a LOT more than you plan to, and my guitar is fine. If I were you, I'd use a rasp instead of sanding. Much faster and easier. I'd sand it to maybe 400... |
