Does interface change quality of sound ?
On garage band for mac, I have a normal adaptor from my guitar to my Apple Mac headphone input ...but when I listen to my recorded sound it's all muffled but when I hear the guitar through the monitor it sounds ok ...if I get irig or apogee jam will the recording sound be much better. ?

Better, but probably still not great. The quality of your sound will increase with the quality of your interface. Go to the interfaces sticky, it has lots of information and recommendations.

that, and proper EQ/compression. recordings sound different than live. I've never understood why, I just know that they do.

Yes they do.
Better A/D converstion = Better source sound. Better source sound = Better result. You can't polish a turd etc.

If your not using an interface now then yes...which is your current problem.
Side Rant (Somewhat Related): There is more to it than interface in my opinion that is something that is not mentioned on here enough. The guy who reads up and knows what he is doing can take a UX2 and make something 100X sound than someone who is just buying better gear hoping it helps and is using a pro40. Mixing has a major effect on sound quality. If you think a better interface will make it sound better usually your just throwing money at a problem going it fixes it.

Well yes of course, but quality in the cases of the Scarlett 2i4 and the UX2... well there is an obvious objective jump in quality in regards the 2i4

Wow I'm lost !! so an apogee jam is not an interface ? I have a line 6 pod 2.0 is that an interface ? I'm new to all this !

An Apogee Jam is an interface. Its much better than pretty much everything in its price range but its very limited since it obviously can only do guitars. An iRig isn't. Those are just shitty overpriced 1/4th to iPhone/iPad inputs. The Pod 2.0 isn't either
If you only plan on doing guitar, direct in & never plan on using a microphone ever, the Jam is a good unit. Otherwise, look into the Focusrite Scarlett 2i4 like mentioned above or, since you have a Mac, look into the new Apogee One for Mac & iPad (not the One for Mac only).
