I have a Schecter Hellraiser Solo-6 tuned to drop B and every time I play live, the low B string comes off of the saddle at some point or another. Do I need thicker strings or something?

You should be using something along the lines of Beefy slinkys for tunning that low. Your tone is probably suffering greatly with noodley strings. Get some 12-54/56 gauge strings and have your guitar intonated and the neck relif se correctly.
