We did fish and chips tonight. Fish turned out ****ing brilliantly, but chips were a bit iffy. Need to experiment with them further.

For the fish, we used fresh Atlantic cod, four fillets. For the batter, we whisked flour, cornstarch, paprika, salt, pepper and a bit of wasabi powder together, then combined with a bottle of O'Dell 90 Shilling. Whisk together until well combined, should be thinish, but not runny. Then take three egg whites, whisk until peaks form, and fold into the rest of the batter mix. Fry four minutes in canola (or similar) oil for 4 minutes at 375*F. Easy enough, and super delicious.

Matt is really stepping up his game. It is impressive.

I'm more of a simple man when it comes to cooking. Whatever is easiest and tastes good

Matt - your steak cooking process you outlined seems really yummy. I bet you could do that on a Weber - just have a drip pan underneath to catch all goodness.

But my ol lady has been picking up new recipes from Publix and some are quite good. Less than 30 min prep and very tasty

I'm cooking grilled pork-chops with grilled red potatoes w/ minced tarragon and horseradish skewers for dinner.
