Back around Easter, I made this sandwich:

Rosemary & olive oil artisan bread, lightly toasted
High-grade EVO, drizzled on bread
Cracked black pepper
Cambozola soft blue cheese
Strawberry & pineapple glazed ham slivers

The herbaceous flavors of the bread, the sweetness of the ham, the bite of fresh pepper and the tangy blue cheese come together well.

This sandwich inspired a new variant and today's lunch:

Rosemary & olive oil artisan bread, lightly toasted
Lox
Cambozola soft blue cheese
A generous sprinkle of black pepper
A generous sprinkle of powdered garlic
A generous sprinkle of dried parsley

I tried it yesterday with roasted garlic bread, but something about the sandwich- good as it was- told me that the rosemary olive oil bread would be better. And it was.

If you don't have that bread, a good crusty rustic white bread of some kind, toasted and enhanced with a drizzle of EVO and restrained sprinkle of rosemary should be a decent substitute.

I finally bought a Lodge 12" cast iron skillet today. I don't know what I've been waiting on. My first order or business was frying some bacon, then cooking burgers in the bacon grease, for the sake of bacon cheeseburgers.

Today was a good day.

I like cooking bacon then eggs in a cast iron skillet. They make the best cornbread too

That's a good order to cook in any type of cookware. I've cooked with cast iron plenty of times back home and at my girlfriend's house, but for whatever reason, never bought my own. I've been thinking for a while about upgrading my cookware, but decided that just buying a cast iron skillet would be cheaper and more effective.

Tried a little paprika- regular, couldn't find my smoked- on mine tonight, as I said I would.

Now, accounting for the fact that paprika tastes better when you cook it into a dish as opposed to sprinkling it on like pepper, it still added a nice flavor to what I was eating. So next time out, I'm going to add some to the mix to see how that works.

I love cast iron cookware, so much that my wife got me the largest skillet Gander Mountain carries for Christmas one year. I've got half a dozen smaller skillets, 4 10" Dutch ovens and 2 griddles.

Congrats on joining the cast iron family!!

I find cast iron cookware at yard sales pretty regularly, people just don't know how to use it.
