Okay so I've been messing around with some projects in logic recently
I do some work
Put some plugins on the strip, adjust some settings and all

And then RANDOMLY, out of the blue, I left click on a plugin the strip and it disappears
Normally when I click and hold, it expands into a menu, gives me options and everything
But here it just removes the plugin from the strip

Its the same thereafter, logic just does the same thing over and over
And I have to restart my macbook in order to correct this problem

Any ideas whats wrong?

Never witnessed this one, so can't help, but have you tried googling the problem? "Disappearing plugin bug in Logic Pro __*" where __* = the version of Logic you're using.
