I'm writing melodeath songs in E and I'm going to form a melodeath band. It doesn't matter in what tuning you're in, as long as music is good. Hovewer, there are some ways to make your riffs sound heavier (Josh Middleton from Sylosis explains how to beef up the powerchords at the beginning of this video http://www.youtube.com/watch?v=waszqgxsEBU).
But most importantly, make the bass guitar loud enough in the mix, write parts where there are octaves and powerchords on bass (in the style of Steve Harris). I found that out while writing out the bass parts for one of my songs in Guitar Pro. Made a world of difference in sound when I turned the bass up in the mix.

Kalmah's They Will Return album, most, if not all of that is in Eb, and it's easily the best Melodic Death album ever released, in my opinion.
