I'm inexperienced with changing pickups so there's little point in buying them (many have apparently changed the stock pickups to Dimarzios with the Ibanez). Any more suggestions would be appreciated.

I don't change pickups myself, either. I have a guitar tech I trust do the work for me. Sure, it costs a bit, but the job gets done right. Not only that, if there is something going on with your guitar that you might not notice, they'll catch it.
IOW, don't be put off a guitar because you might want to change the pickups. That said, DON'T buy pickups to swap out until you've actually played the guitar for a while. The stock ones may just be fine.

Anyone have anything to say about PRS SE's? I read a thread recently that said they are the best guitars for the money in the price range. This here seems like a nice deal.

I don't know those in particular, but PRS in general makes a quality guitar.
