Many jazz songs have different arrangements for them. You can for example find the jazz classic "Autumn Leaves" in over 100 versions. Some really hard, some really basic.
Try finding some basic versions of jazz classics to start with, Autumn leaves is a good example.

Get the real book. Most songs on it are fairly easy. They'll especially be cake for someone who can play nevermore/jeff loomis. Learn both the melody and the chords. If you play then exactly as it is on the sheet, then it'll be extremely easy and you'll learn lots of new chords. Later on you can add fills, arpeggios, etc to and play with rhythms to make either (ore both) the melody or the rhythm parts more challenging and interesting. It's what I've seen people do. I can play the standard "all of me" for instance, yet I looked it up on YouTube and saw a duo playing g it and it sounded very different and much more difficult than when i play it.
