I like M7 and m7, although a little cliche.
I also like Sus2 chords. I think they are the best. add6 chords are very "Green hill happy" if you know what i mean.

One sonority that I think is really beautiful and totally underutilized is 7sus4(add3). A good way to voice it is a normal 7sus4 chord with the added 3 on top (doing the opposite - a normal 7 chord with the sus4 on top - would give you a nasty sounding b9 and obscure a lot of the chord sound). Doing this makes you hear the 3 as a tension ("tension 10" if you will) and the sus4 as a basic chord tone. Alternatively, you can place the 3 and sus4 right next to each other, which will give you a b2 rub, which can be very nice sometimes. Here's a basic example, spelled from the bottom up:
D7sus4(add3) D G C F# |

I personally like stuff with lots of open strings, something like
Code:
Those being Em7, Cadd2 and Dsus2sus4... I think. |

This is my secret weapon. I use instead of octaves for weird results :
EADGbe:x7896x ( intervals R,b5,8,b9 ) This is a more classy chord. Am(maj7)add 9 EADGBe:x06557
