Pickstyle outside of rock/punk/metal?
I really want to play but I've torn up my plucking fingers and thumb pretty bad, so I figured I'll work on some pick stuff instead.
Thing is, most pick stuff is used in rock, punk, or metal which I'm not too into right now. I know some funk players use a pick for a percussive muted thing. Any suggestions on players like that?

Steve Swallow I beleive plays picked. He goes for more of a jazz guitar type tone though.

I know what you mean, my thumb is fuked because i always bite my fingers
but I can only play with a pick for a certain amount of time before it starts to kill my wrist FINGERS ALL THE WAY

Check out Graham Maby's work with Joe Jackson. There's some rather funky stuff there and he uses a pick often when playing.
Here's a cool video someone sent me once. Yes, its in French but got some interesting playing in the funk style with a pick.

^ +1. Both Gordon and Lesh are amazing players, and prove that there are no bounderies to pick-style.
Also, TS: Try putting a piece of foam underneath you strings, right in front of your bridge. Use a pick and slightly palm-mute. Instant percusive thump.

I play play jazz and country mostly and use a pick and palm mute for nearly all of it, I like the way the staccato percussive sound of muted picking cuts through a mix.
