The first complete solo I learned was the solo to Paranoid. Cool for learning blues scales and some licks. Pretty easy, but the timing in the second half is what you need to watch for. Try it.
Other challenging yet easy solos
-Floods by Pantera (if you can do pinch harmonics and such)
-Paranoid
-Highway to Hell
-Bohemian Rhapsody
-Hotel California
-Stairway to Heaven (WARNING do not play this song in a shop)
-Eruption (WARNING do NOT do the tapping in a shop, just a no no)
-Smells Like Teen Spirit
-Heartbreaker (easy for me, I don't know about for others)
-Time
-Sympathy For The Devil (good licks to learn and lot of time in between them)

countless other songs

The 1st solo in knocking was the first one I learned. Seems easy, but try playing it as speed. I find those prebends tough.

I could give you plenty of examples, but chances are that you end up practicing a song you don't really like.

Tom Sawyer by Rush is a good one to start with.
My first solo was Smells Like Teen Spirit(too easy)
