Theres a live version of Metallica covering Queen's "Stone Cold Crazy" on one of the Binge and Purge discs that I have always really liked. Either that or Aaron Lewis doing a live acoustic cover of Comfortably Numb on their singles compilation, his version is incredible

runners up:
Metallica covering Whiskey in the Jar
STP covering Thank You
Dynamite Hack covering Boyz-n-the-Hood
and any songs Jack White/The White stripes have covered

Well, the obvious is (for me) Hendrix covering Killing Floor, All Along the Watchtower, Hey Joe, and Like a Rolling Stone.

I also saw Pearl Jam once and they did Reign O'er Me and Rockin' In The Free World. Both of those were pretty bomb.

Also got to see Phish. All of their covers were pretty awesome. Especially Rock and Roll by The Velvet Underground.
