I've also seen other dudes doing this and my question is, why?

if it's anything like what Kirk Hammett does then the reason that the tape is there is to cover weak areas of skin to stop them ripping open if they catch on the guitar/bridge

Yeah, especially with bridges that have stuff poking out of them like screws. The Fender bridges with stamped saddles are notorious if you are a heavy riffer and mute a lot. I like to call them "palm shredders".
