I know that high-wattage soldering irons can demagnetize the pickups and just be generally bad for working on guitars, but is a 30 watt iron too much?

For guitars you want a 25-40 watt iron. So, yes, a 30 watt one will be just fine.

Something about the transformer in the iron or somesuch, I gather.

I understand, though, that you want a lower-wattage (15 or so) iron for working with pedals and stuff?
