I JUST replaced the pots on my 60's kingston viola bass, and when i got her home, i was turning the knob to give it another check, and one side of the metal pot's knob broke off!! I had just put on new strings and went through a lot of trouble to but the dang pot on so i really dont wanna put yet another new pot on. Do you guys think i can just solder it back together or something without having to go back in?

nah. if you broke off half the shaft, soldering won't do it. bite the bullet and put another new pot in.
