I have an Orange 4x12. Would I be able to plug that into the Left/Mono input on a Duoverb? It has a 4 Ohm minimum.

Whats the ohm rating of the cab? As long as the Left/Mono output of your amp, and the cab's ohm ratings are the same then yes you can do it.

Sooo.. I checked the manual and it says to plug a 4x12 into the Duoverb, you plug it into the Mono/Left and put the Output Impedance on 8 Ohms. Does this sound correct?

No, for a 16ohm cab you need a head that's output is 16ohms. Your speaker cab impedance should match your amp. If its a solid state amp it probably won't hurt it, you'll just have about half power, but I wouldn't recommend it with a tube amp.
