What is the most versatile large diaphram condenser mic? I want something to do male and female vocals as well as jazz guitar, overheads on drums etc. Preferably something very low noise and is under 500pounds

Try the M Audio Sputnik. I haven't heard anything bad about it. Great tube warmth, multiple patterns, and it does very well on vocals. Sonicstate and Emusician have good reviews on the unit.

As for most versatile period, the Rode NT2000. Infinitely variable patterns, pad, and high pass filters. And exceptionally low noise (Rode really tries for it). It's solid state and very transparent.
