12 Angry Men. Nothing but dialogue in that movie, it's filmed entirely in one room. And it's good.

I haven't seen it yet, but Frost/Nixon seems to be a perfect conversation-based movie. It's all based on interviews between the title characters. However, it's not going to be available on DVD or anything for awhile, if that's what you're looking for.
