to my understanding there is a difference. is that true or false, and if true what is the difference?

It is true. A 7 string guitar has 7 strings, the 7th string being the lowest note. A Baritone guitar has a longer scale length and thus suits the guitar to be tuned to lower notes, and has 6 strings.

+1. There are actually baritone seven strings as well because some people prefer the increased tension and it helps with intonation.

7 strings have an extra string called the low B,so you can achieve lower tunings and extended musical options on a standard scale guitar.Baritone guitars have an extended scale so the strings still maintain tension when tuned low and don't get floppy or muddy.Both good solutions to the problem of getting low tunings while retaining decent string tension,but both 7 strings and baritones fail in comparison to their offspring,the 7 string baritone.

Not quite, a baritone guitar usually follows the same intervals between the strings as a normal guitar, making it BEADF#B
