I listen to Van Halen, Paul Gilbert, Jimi Hendrix, Eric Johnson, Buckethead, and more of those kind of guitarist.

Do you recomend any fun, not to challenging, songs to learn that kinda falls into that category.

From those artists, not really. You should learn challenging songs anyway, and I don't think any of those artists are easy to imitate well. Just search for tabs until you find one that you think you want to learn.

You listen to it, but can you play it?
Paul has some great songs - Scarified and Technical Difficulties are both fun and challenging, and then there's stuff off of his solo albums but only a few have been fully tabbed unfortunately. Vai maybe? For the Love of God could make it interesting for you

Anything by those artists.

Just dig in and find out which ones you can play/ enjoy playing.
