ok, i have a budget of about $300. I need a simple, easy to use recording software, and a mic. Whats the best setup I can get in that price range? I can always save up more if nessecary, but it should be around that price. thanks!

Except no mic. Try the toneport, maudio fastrack, emu 0202.

Then get a sm57.

I agree E-mu 0202 or 0404 both come with good software and then an SM57. Maybe a pair of headphones as well. Sennheiser hd280 would be a great option.
