In these diagrams what does start/finish mean? Which is hot and which is ground?

Also, these should help with a lot of the 'how do I do such and such with my humbucker' questions.

It means exactly what the names suggest; it's the start and finish of the coil.

Start=hot, finish=ground.

Or it would work the other way round if all the other pickups are the same way. This is where coil phasing comes into play.
