Okay, I want to put a Bigbsy Tremolo system on my Epiphone Les Paul, it's a lefty, but I don't think that changes much because I don't even think they make them left-handed.

But I need to know which one would work? Would a B7 work?

the b7/70/700 are what you need for a carved top. They make 'em lefty, but they're more expensive. The 70 and 700s are licensed reproductions, like an LFR. The B7 is made by Bigsby, but costs more

I saw a picture of Paul McCartney playing a guitar with a Bigbsy that was right handed, I can do it.
