I will soon replace the emg 81 with SD jazz and SD Jeff beck.the guitar has one vol and one tone knob.can i somehow use them or i have to put completely new parts...i mean knobs switch and wires? thanks

Right so you have a pair of 81's. Replacing both is not too bad but you have to change the pots to suit the passives. You may want to change the jack socket as well, so you can sell the lot as a proper set.

Replacing just one is a nightmare which will require routing and drilling for new pots as the EMG ones are no good for passives. Almost certainly, you'd need a new backplate, too.

so the best thing for me is to pull everything thats in the guitar out and install new pickups as they where the first pickups in the guitar?

You have to replace the pots, caps and wire the jack in stereo, so yes gut the electronics and switch to passive values.
