I want to run my pedals off a 9v adapter instead of the battery. Could I just use any 9v adapter, or should I get one specificly for pedals?

As long as the voltage and ampage is the same your fine. All made the same anyway. There should be a sticker or something telling you power requirements on it

I tried a random power adapter on a cheap danelectro pedal and the pedal started smoking, so beware

It does not matter if the battery is in there. The circuit bypasses the battery when you use an adapter. He probably used an adapter that was not right for the pedal.
