I have heard a few from hardcore or metal bands such as Halcyon by Acacia Strain and also Stolen Glances by With Honor. What other bands have recorded acoustic instrumentals like these?

Acoustic, specifically? I could name you a bunch of instrumentals but acoustic narrows it a bit. Laser Speed by BTBAM springs to mind, and All Shall Perish's Greyson. +1 to Pathos, great instrumental.

The Red Chord has one on each CD. The one on Prey for Eyes is awesome. Forget what it's called. I think He Was Dead When I got There. Not sure.

He Was Dead When I Got There was the closer to Clients, and wasn't acoustic at all, but it's instrumental and possibly one of the best songs I've ever heard. Such a good one.

Scale the Summit is a great instrumental metal band but they're not acoustic.
