I don't know if this the right forum, sorry if it isn't. I'm wondering what do bands like the Grateful Dead and the Allman Bothers Band use for their guitar? Like pedals or amp settings? I don't know much about guitar. Thanks.

Popular guitars in that genre seem to be 335's, SG's and Les Pauls, as well as an occasional strat. Amps are varied, but tend to be US-voiced amps with headroom, or solid-state Kustoms in Jerry Garcia's case.

they mostly play les pauls & SG's ( Duane allman & Dickey Betts)
Duane used 50 watt marshall combos & a super bass head
Dickey Uses marshalls
Warren haynes uses a soldano

Jerry played a ton of guitars through his career so you'd have to narrow it down to a year or album or something. Bob played a es-335 alot of the time. With the Allman brothers you cant go wrong with a SG or Les Paul. Ive seen pictures of Jerry with a strat and I know Duane used one for session work but for the most part Id stick to something with humbuckers.

As for your question of how they got their tone, its all in the fingers.

Duane Allman used mainly les pauls, into Marshall Bass spec 50 watters (either JTM50s or 1986s) into Marshall 4x12s with JBL speakers. Dickey Betts ran a similar rig. Big difference in tone however, mainly because of their pickups, Dickey Betts's tone sounds like slightly underwound PAFs, Duane Allman's pickups in his cherry burst les paul were custom rewinds, and wound very hot. His pickups in "Hot'Lanta" were stock PAFs.

No clue what Jerry Garcia used, but his tone on Europe '72 was spectacular. His lead tone on "China Cat Sunflower" from that album is one of my favorites of all time. I imagine Fender amps with some sort of light overdrive in front.
