Last night I posted a thread about halfstacks, and the replys turned my decision around to buying a peavey vypyr 75W
but if I ever had to mic it to make it louder, how would I do so?

find the centre of the speaker, bring the mic out 1 inch, then move one inch to the right (that's what I do anyways)

put a mic near the speaker, and then run the mic through a mixer. its a alot simpler than you may think.

Im kinda new at the whole double-amping thing haha
would I need a mic amp or PA?

double amping??

If you mean double tracking, it's a case of recording the exact same guitar part twice, so when together you shouldn't notice there's two going at once for the same guitar part.

If you listen to the song on my profile you'll see what I mean, it's actually 3 guitars each side for the rhythm parts

I highly doubt 75w will be too quiet for recording purposes...
