What are good classic rock/metal songs we could play without a singer. We were thinking of doing Sultans of Swing but what other songs could we do aswel as.

a well known instrumental song.... I dont really suggest covering a song without a singer. sultans of swing is a good song to do if you have to though, all of its fills and the solos make it recognizeable.

sultans of swing would be cool but also think of songs you add some fills into that would be cool it can make your whole performance more personal

At least there's an instrumental track on there..

also you could check out some apocalyptica and transcribe it to your bands instruments.

Do you mean to gig without a singer, or just as little instrumental breaks in a set? For almost any venue owner, booking an all-instrumental band is commercial suicide (unless it's Satch-calibre).

If you're thinking Dire Straits then I assume you're more classic rock? Try some Floyd, mellow Zep, Deep Purple, or anything else with a complex enough structure to keep people entertained.
Prog is always a good source of instrumentals - try King Crimson, Jethro Tull, Yes etc. And don't forget the obligitory Satch/Vai et al.
