I've seen a lot of guitars that have covers that don't quite, cover the pickup; They only seem to cover up the edges and I've been wondering if anybody still makes them and if so where i can find some

sounds like Rickenbacker "toaster" style pickups, Dearmond pickups, Filtertrons and Gold Foil pickups to me. Just look around.
GFS has some cool "budget" models that are built off of normal HB bobbins.

those are some places to start if you're looking into "semi-covered" pickups. Dimebag had a custom designed pickup that really doesn't fit your description, but I included that in there.

well i would imagine the coils were taped but the tape around the edges was a way to keep your strings from getting caught on the lip of your pickup

the picture link i posted was of a guitar fetish pickup from a link mentioned above. they're pretty cheap, only about $30ish, but they're decent pickups. i don't recall ever seeing those types of covers sold separately though.
