So I just re-wired my guitar with 2 new humbuckers, 2 tones, 1 master volume and a series/parallel switch for each pickup. It worked out well except for one thing. When I touch any of the metal hardware or strings, it starts to hum like a crappy single coil at high volumes. when my hands are off its dead quite like it should be.

Maybe a grounding problem?
Where the hell did slide guitar go!?!

You might have wired the hot and ground wires backwards on the output jack, I think that's what happens when you do that
