I have heard that the Martin DXJ is very durable and does well in bad weather (I live in New England). How does the DXJ compare to the Seagull Mini Jumbo. Does the fact that the DXJ is made of all laminate make the Seagull sound better? Which would be better for flatpicking?

Go with the Seagull. The DXJ is a POS IMO.

I would take the Seagull mini jumbo any day(it's one of my favourite guitars under $1000). The Martins are also made of laminate, but a Martin patented laminate called HPL(high pressure laminate). It's not really superior to the Seagull laminate and is probably less durable. Seagull's laminates are top notch.
