I have a Douglas WRL595 and it sounds great but I like single coil tones and was thinking of adding coil taps to it with push-pull pots and a new bridge.

However, I have a Squier Strat that is a good base for upgrading and I can just get single coils, new electronics, and tuners for a different sound that's more vintagey.

Which one seems like a better idea?

It all depends on which guitar you care for most and which guitar isnt as good as the other.

I'd use the one that isnt as good and you care for less.
