Antione DuFour's "Naissance."
There is also a version of it with DuFour and Tommy Guthiere (is that how you spell his last name?) who is a violinist, and they play it together and it sounds absolutely beautiful.

I listen to and play songs from so many acoustic solo artists, this is really quite difficult, but I think I'll have to go with Andy Mckee's cover of Don Ross' "Tight Trite Night". I hate the original.

In case you couldn't tell, I"m a huge muse fan, so yeah. My girlfriend knows (or at one point knew) how to play it own piano. I'd imagine It'd be very difficult for guitar.

The version of greensleeves Jeff Beck plays on the Truth album
