It all depends on your skill level

anything by Francisco Tarrega
Isaac Abeniz has some good (but very advanced) pieces that were transcribed for the guitar
or Joaquin Rodrigo

The Joaquin Turina Sonata is an excellent, albeit difficult piece. It'll take a lot of time but it's well worth the effort. Plus it's great to play in concert, as there are some very flashy sections. Check out the Manuel Barrueco version.
