One of my buddies said to get a good recording tone, record through two different amplifiers, and pan amp 1 to the left and amp 2 to the right.

I know jack nothing about recording, is there any truth to this? Also, is it better to layer different amplifiers for a better tone even if they aren't panned? Or am I better off just sticking with one amp?

Well i dunno about better tone. But if you pan the two main guitar tracks to opposite speakers it will create a balaced sound. Doing this makes each guitar's sound easier to hear instead of them being stacked on each other.

Regarding the amplifiers, it's nice to have a variance in tone, but you could use the same amp and just switch pickups/round off the volume on the guitar.
