Who would they be and why? You would get there technical ability, music theory knowledge, and know all the songs they have ever learnt.
For me, it would be-

Paul Gilbert - Pure technical skill, speed, and compositional ability.

Buckethead- Once again, technical skill and speed, but also amazing ability to portray emotion in his playing, and improv skills.

John Frusciante - Ability to create wacky and awesome riffs, Improv, and chord work.

I'd take the technical skill and profician of Buckethead, the ability to put feeling into solo's of Clapton and then the rhythm skills of Dave Mustaine just so I'd be a kickass metal rhythm guitarist.
