from top to bottom:

1) E

2) B11/E

3) A/E

Basically, you've done a I-IV-V progression with the E's droning. In the E and A chord they fit, because E is the root note of E and it is the 5th of A, so they sound pretty normal. E is the 4th of B, so from that you get a B11 chord.

It's right except for the B chord, which would be B11/E. E doesn't occur in a B major chord, so you have to add the upper extension (4=11)

So change that! Read the threads, you won't be disappointed. It's actually fairly straightforward, just time consuming.

Edit: B11? Gotcha. I was wondering about that, but since I figured E is in the B Major Scale anyhow, didn't seem important enough to make the distinction. Thanks.

I am right in beleiving that I can omit the fifth if I were to extend chords using a 7th?

You don't need to write an extension so the bass note included, it's all good. Badd11/E or B/E are both correct. The former is more specific, but you don't need to know that it's an 11th because the function of the E as a bass note is pretty clear from looking at the other chords.
